Our Story


We’re all about fresh, furiously flavorsome authentic Japanese street food and sushi. Although sushi’s at the heart of what we do, we have a spectacular range of street food, from traditional classics to innovative fusion dishes designed by our Executive Chef and his team.



Our vibrant food has been delighting hungry guests since 1997. From the first YO! in Soho, London, which introduced the ‘kaiten’ conveyor belt and color-coded dishes to this country, we now have almost 100 restaurants around the world. In that twenty years, we’ve never stopped discovering, exploring and innovating…we’ve got stacks of new dishes, venues and ideas coming round the belt!

The one thing all our food has in common is…SHINSEN! It’s Japanese for fresh, and we love it. That’s why we serve all our dishes the day they’re made – with lots prepared right in front of you in our open kitchens, by our expert chefs

Fish fish fish

Our tuna is frozen at -60°C, right on the boat – that means the same freshness and quality as fish served 24 hours from being caught. That’s because we know great taste comes from great ingredients. As for our salmon, our partners only catch fish of superior-grade quality, with the speediest fish to fork timeline. All our fish is hand scaled, hand filleted, hand pin-boned, hand trimmed and hand packed. You really have to hand it to us, in fact…



We don’t serve bluefin tuna, ever. That’s because its endangered. We serve only bigeye, yellowfin and albacore tuna – in fact, all our seafood is sustainably sourced. Then our fish is hand scaled, hand filleted, hand pin-boned, hand trimmed and hand packed.


Authentic products

We insist on the finest ingredients from our specialist and artisan suppliers. We serve only Yamasa soy sauce – Japan’s favourite soy – and our special vegetarian miso is made in Nagano just for us, by the world’s number one producer, Marukome.

You’ll find over 25 vegetarian and vegan dishes on our menu. Ask a team member to point them out and we can help. Our unique miso soup base blends shiro miso, shiitake mushrooms and kelp to maximise its mighty umami flavour.
